Sweater Weather Lasagna Soup
There’s something about the first real chill in the air that makes me crave cozy comfort food — and nothing says sweater weather quite like a bowl of lasagna soup. This version, shared by a dear friend, brings all the hearty satisfaction of lasagna without the layering or fuss. Velvety butternut squash, tender noodles, and melted cheese come together in one pot — the kind of meal that makes you want to pull on your favorite sweater and settle in.

I love lasagna, which I find very time consuming to make. And soup is my go- to fave food so I am always looking for new varieties.
So this is a combo of both , super satisfying with the noodles ,velvety butternut squash and cheese . No milk or cream so it feels indulgent without being overly so , and although I am not a huge fan of beans, adding cannellini beans makes it even heartier and more filling.
Even those who are not sure how they feel about butternut squash gobble this up- and I use precut squash to make assembling this even easier.
3-4 cups fresh or frozen cubed butternut squash
1 medium sweet onion, chopped
2-3 cloves garlic, minced or grated
2 Tblsp butter
2 Tblsp olive oil
About 8 dry lasagna noodles, broken into pieces
8 cups vegetable broth, divided
1/2 tsp dried oregano
1/2 tsp dried thyme
salt and pepper to taste
1 cup shredded mozzarella
1/2 cup grated parmesan
In a large soup pot, heat the olive oil and butter over medium heat
Add the onion and cook, stirring occasionally , until soft. Then add the garlic and cook , stirring ,for another minute.
Add squash and 6 cups of the broth along with the oregano, thyme, salt and pepper to taste
Simmer about 15 min until squash is tender
Using an immersion blender, puree mixture in the pot til smooth.
Add the remaining 2 cups broth, and broken noodles to the pot and mix
Simmer for around 10-15 min or til noodles are al dente
Remove from the heat and add mozzarella and parmesan. Stir a few minutes until cheese is melted.
If you like beans, you can add cannelini beans when you add the cheese.
Serve immediately (with extra cheese garnished on top if you like.)
